Come summers and it is impossible to think of a hot day without luscious delicious litchis. And what could be better than a litchi sorbet to beat the heat? This super-easy and super-cool recipe is what you need to chill on a blazing summer day. We give you the option of making it punchy with a dash of vodka — but that’s purely optional.
What you’ll need:
500 grams of fresh litchis
100 grams of castor sugar
One and a half cups of water
Juice of half a lime (about two tablespoons)
How to:
In a large pan, add the litchis, water and sugar and bring it to a boil. Ensure that the sugar is fully dissolved.
Allow the mixture to cool and when it has completely cooled to room temperature, remove the the litchis from the syrup and deseed them.
Mix the litchi-flesh with the sugar syrup and blend in the lime juice. Whip it all up in a food processor until the mixture is smooth and even in consistency. If you like it extra smooth, pass it through a sieve.
At this stage, you can add about 30 to 45 ml of vodka if you want an alcohol-laced cooler. Feel free to skip it if you want to stay sober to enjoy your sorbet.
Add all of it in a freezer box and freeze until solid.
Once it has solidified, remove it from the freezer and churn it in the blender again for another ten minutes.
This time freeze it overnight or for eight hours. Serve immediately.
